Soft pressing of the grapes. Start of alcoholic fermentation with selected yeasts at a controlled temperature.
Refinement and Second Fermentation:
Ageing until the spring following the harvest. Second fermentation in autoclave at temperatures between 16-18°C until reaching a natural pressure of 5.5 atm.
It has a bright wheat-yellow color and is perfectly sparkling. The scent offers notes of white pulp fruit and acacia flowers, while, for the taste, it is fresh and harmonious.
