Soft pressing of the grapes. Start of alcoholic fermentation with selected yeasts at a controlled temperature.
Refinement and Second Fermentation
Ageing until the spring following the harvest. Second fermentation in autoclave at temperatures between 16-18°C until reaching a natural pressure of 5.5 atm.
It has a wheat-yellow color with greenish reflections, perfectly sparkling. The bouquet ranges from apple to pear, blending with pleasant notes of white flowers. On the tongue it is lively, fresh and well balanced.

It finds its complement in a spaghetti with clams or in a white risotto with seafood, flavored with fresh rosemary. Serve with baked fish with crispy potatoes and grilled peppers.
