Soil composition
Medium loam soil with a clay presence.
Vinification, refinement and secondary fermentation
Glera 90%: soft pressing of the grapes and start of alcoholic fermentation with selected yeasts in temperature-controlled steel tanks.
Pinot Noir 10%: early harvest of the grapes to preserve the aromatic finesse. Traditional red vinification with early racking.
Subsequent assembly of the two batches and start of refermentation in an autoclave for 60 days at a temperature between 16°C and 18°C until a natural pressure of 5.5 atm is reached.

Organoleptic characteristics
It appears with a delicate and brilliant pink, embellished with a fine and persistent perlage in a continuous chain, that pushes sinuously from the bottom to the top. An expression of roses and currants, seasoned with notes of apple and white flowers. The lively, almost crunchy, sip unfolds vertically on the palate with a pleasant persistence. Fresh, clean and thirst-quenching finish.

It pairs perfectly with fish appetizers, butter and sage tortellini, vegetarian lasagna and grilled vegetables, but also with medium-spiced meats, cured meats and fresh cheeses. Versatile for brunch, from vegetable soufflé to desserts such as fruit tart.
