Vinification, refinement and secondary fermentation
Soft pressing of the grapes. Start of temperature-controlled alcoholic fermentation with selected yeasts. Refinement until the spring following the harvest. Second fermentation in autoclave at temperatures between 16°C and 18°C until a natural pressure of 5.5 atm is reached.

Organoleptic characteristics
It has a bright wheat-yellow colour that’s perfectly sparkling. The scent offers notes of white pulp fruit and acacia flowers, while the taste is fresh and harmonious.
